Freezing fondant covered cookies

Just wanted to give some feedback as I have just done this.

A week ago I made some cookies using Too Nice Too Slice's recipe. Covered the hot cookies with fondant and when cool froze them separated by baking paper in an airtight container. Just took them out of the freezer and placed them on a cooling rack. The fondant goes a little sticky but after an hour or so cookies and fondant are perfect and I have just added royal icing decorations!!!!

I've never thought of freezing fondant either. That's going to be a great time saver when I'm preparing things for my mum's 50th birthday!

I have frozen fondant covered cookies that have already been individually bagged. When they were defrosted, the cookies were still perfect. Smile

No problems MrsG. It's great that cookies can be frozen without any ill effects. If I can get organised, I am hoping to start my Christmas cookies in late November. Smile I have a big order of 400 cookies for early December so I have to be a more organised.

Wow Barbara, 400 cookies!!! is that for one customer or many??

I also make cookies but have never tried freezing them. Will have to give it ago.

The order is for one customer. The stressful part is our school/church fete is in late November and for the past couple of years I have made and donated about 50 packs with 6 cookies each. If I still want to do that I will have to start making the dough and cutting out the cookies in late October Shocked . I nearly killed myself last year trying to get it all done in November!!!!! Shocked Shocked By the time everything was done, I was so over the cookies that I did not make any till Easter next year.
